The brewing art goes back over 8,000 years. In fact the very oldest extant human writing is a beer recipe which includes a hymn to Ninkasi, the goddess of fermentation. Louis Pasteur was hired by the French government about 1870 to find out why German beer was outselling French beer in France and the world. His work on brewing yeast uncovered the concepts of bacteria and pasteurization launching a scientific revolution we take for granted today.
Since Pasteur’s discoveries there has been an explosion of scientific knowledge that helps us understand how these processes work. Beer is a very complex drink with over 800 known compounds. Wine is so very simple in comparison. Grapes and sugar!
Below are some of the over 80 books and technical science journals we use at Hidden Well Brewery to constantly guide and improve our craft. I readily admit I am somewhat of a fanatical beer geek. I have read every one of these books cover-to-cover and many of them multiple times, especially the professional brewing volumes - over 20,000 pages of beer brewing information.
